The Mash challenged Whitney Young’s Mikhaela Padilla to make meals that have five ingredient or less. Not only did she come up with these fab, healthy recipes, but they are so easy to make!

Fried tofu

Ingredients:

Tofu (soft, medium or firm)
Vegetable or canola oil

Directions:

Drain the packaged tofu and slice it evenly or in chunks. Personally, I like to use the soft tofu, but you can use any kind that you like. Lightly oil a frying pan and place it on medium heat. Once the oil is hot, put in the slices of tofu and cook it for about 10 minutes on each side or until golden brown.

Tip: Be careful of oil splatters, the tofu is very moist. If you want a dipping sauce, you can combine 3 Tbsp soy sauce, 1 tsp. rice wine vinegar and 1 tsp sugar.

Fried plantains

Ingredients:

Ripe plantains
Vegetable or canola oil

Directions:

Lightly oil a frying pan and set your stove on high. While the oil is getting hot, slice the plantains in half (vertically and horizontally). Once the oil is nice and hot, turn down the heat to medium and put the plantains in the pan. Cook them for about five minutes on each side or until golden brown. This is great with sprinkled sugar on top!

Scrambled eggplant

Ingredients:

2 eggplants
5 eggs
Salt
Pepper
Vegetable or canola oil

Directions:

Grill the eggplants and scramble about five eggs. After the eggplants had cooled, peel the skin. On a plate, flatten eggplant and season it with salt and pepper. Lightly oil a pan and put it on high heat. Once the oil is nice and hot, place the eggplants in the pan and pour the scrambled eggs. Fry each side for about seven minutes or until golden brown and cooked through.

Ingredients:

Celery
Peanut butter
Raisins (optional)

Directions:

Wash and cut the celery and smear peanut butter on one side. Place the raisins on top.
